Vegetarian Soup Recipes

Here are some of my favourite soups. I was pretty much reared on soup and for me, it has a comforting quality that no other food can provide. With a family, I find it a really useful way to boost vegetable intake and immune systems. My own mum always had a pot on the hob when I got home from school and it (usually) kept my sisters and me well snacked up till dinner.

Vegetable Stock?

Making your own stock or broth is definitely a good idea but not strictly necessary. I have to admit that I rarely do these days, especially as there are now some excellent vegetables stocks available to buy. My favourite is Marigold Reduced Salt Vegetable Bouillon which I think is by far the best around. Personally, I think the trick is to not overdo the stock. I water it down well. I want the soup to taste of the vegetables rather than the stock.

Lima Bean Soup

A simple and substantial meal in itself, this soup is made with chunky lima or butter beans in a rich tomato broth.



Easy Red Lentil Soup Recipe

This is a real winter warmer. Soothing and delicious, it's just the thing to come home to on a wet day. It's also very quick to make from store-cupboard ingredients.



Vegetarian French Onion Soup

A flavour-filled vegetarian version of the classic French soup. Slow cooked, caramelised onions form the basis of this soup which is topped with French bread and cheese and baked till golden.



Soup Tips...

Use the best quality ingredients you can find. Your vegetables are the stars when it comes to soup!

Use a good heavy based pot or Dutch oven to get the maximum flavour from your vegetables. I like cast iron best for soups- I use a large Le Creuset Dutch Oven and I find it great.


Gazpacho Recipe
