Here are some of the best vegetarian soup recipes. Soup has a comforting quality that no other food can provide. Better still it's a great way to boost your vegetable intake and your immune system. Even many sworn vegetable haters - kids and adults alike - will happily tuck into a healthy vegetable soup.
For me, it has to homemade. Whatever types of soups you like, nothing from a can or a packet will ever recreate the feeling and flavour you get from homemade soup. Luckily, making homemade soup doesn't have to be a lot of work.
Making your own stock or broth is definitely a good idea but not strictly necessary. I have to admit that I rarely do these days, especially as there are now some excellent vegetables stocks available to buy. My favourite is Marigold Reduced Salt Vegetable Bouillon which I think is by far the best around. Personally, I think the trick is to not overdo the stock. I water it down well. I want the soup to taste of the vegetables rather than the stock.
First, use the best quality ingredients you can find. Your vegetables are the stars when it comes to soup!
Second, use a good heavy based pot or Dutch oven to get the maximum flavour from your vegetables. I like cast iron best for soups- I use a large Le Creuset Dutch Oven and I find it great.
