We all know how important it is to eat a healthy breakfast.
If
you want to feel good, it’s vital to eat a breakfast that provides a
slow and sustained release of sugar into the bloodstream. Too many
carbs will get you off to a sluggish start and a breakfast high in
refined sugar is not going to sustain you until lunchtime, so processed
cereals generally fall far short of providing healthy breakfasts.
I
understand that it is hard to beat the speed and convenience of opening
a box and pouring your breakfast into a bowl but with a little forward
planning and a good vegetarian breakfast recipe, you can still have
that convenience everyday.

Muesli
& Granola
Personally
I’m a believer in being prepared (yes, I was a girl guide though not a
very good one) so I like to mix my own muesli and granola. Muesli is
my number one choice for a healthy breakfast. It's also a great vegan
breakfast. When my husband and I ran a stall at a farmers’ market, we
sold our cereal mixes to a rapturous audience! Our muesli and granola were
so popular, many local customers used to buy in bulk and mail bags to
relatives. I have to say, it surprised me that people got so
enthusiastic about cereal. Well ok, I get excited about these things. I
just didn’t expect other people to. These days, we only mix cereals for
ourselves but I’m happy to share these healthy breakfast recipes for
free. I hope you get as much enjoyment from them as I do.
Porridge
& Oatmeal
Porridge? Oats?
Oatmeal? Whatever you call it – I call it porridge - it’s one of my
absolute favourite easy breakfast recipes. What a bonus that it is so
good for you too. High in fibre, B vitamins and iron, oats are also low
in fat and are known to lower cholesterol. They are also cheap and easy
to prepare making them a definite superfood in my book. My oatmeal
recipes are also ones that my husband and I mixed for our customers at
the farmers’ markets. Check them out. There's a delicious cranberry and brazil nut
porridge. Or a mouth-watering date and hazelnut porridge. I have
yet to meet someone who doesn’t love it.
Weekend

A
full cooked breakfast is great for the occasional treat and
there are plenty of options for vegetarians. The usual eggs,
mushrooms and tomatoes can be made into something special if you add a homemade vegetarian sausage
or two.

An
easy and versatile Irish soda bread recipe, perfect for breakfast. The
oats lend a delicious flavour and texture and a lovely rustic
appearance.
Wholewheat
Cheese Scones
These are wonderful to eat while still warm from the oven with plenty
of butter. A lovely breakfast or tea-time treat.
