Salad Dressing: A Light And Healthy Alternative To Mayo
This is a really lovely vegan salad dressing which provides a
great dairy-free alternative to mayonaisse. It's also
incredibly
easy. Try it in
potato
salad for a tasty and light version of a classic or in any
dish where you would normally use mayo.
Ingredients:
250 mls/1 cup of Sunflower Oil
3 tablespoons of Cider Vinegar
1 tablespoon of
Dijon Mustard
125 ml/½ cup of
Soy Milk
Salt & Pepper
Method:

Simply put all of the ingredients into a blender or food processor and
mix until smooth. Chill until required and use just like
mayonaisse.
