Vegan Salad Dressing: A Light And Healthy Alternative To Mayo

This is a really great vegan salad dressing which provides a great dairy-free alternative to mayonaisse. It's also incredibly easy to make. Try it in potato salad for a tasty and light version of a classic or in any dish where you would normally use mayo.

Ingredients For The Vegan Mayonaisse

250 mls/1 cup of flavourless oil (sunflower, canola or peanut oil are good here)

3 tablespoons of Cider Vinegar

1 tablespoon of Dijon Mustard

125 ml/½ cup of Soy Milk

Salt and Pepper to taste

Method:

1. Simply put all of the ingredients into a blender or food processor and mix until smooth. An immersion hand blender and jug work fine here. Chill the vegan mayonaisse until required. Use it in sandwiches, potato salad, veggie burgers etc.
