Tomato And Zucchini With Pesto

This tomato and zucchini vegetable side dish is quick to put together and makes a lovely alternative to your usual vegetables. It's also good with pasta. I like to sweeten it with a little apple concentrate but you can use sugar or honey if you prefer.

Ingredients

1 onion, diced

1-2 cloves garlic, minced

1 zucchini (courgette), cut into thin half-moons

5 large ripe tomatoes, chopped or a 400g/14oz can of chopped tomatoes

1 tablespoon tomato puree (tomato paste)

1 tablespoon olive oil

1-2 tablespoons of pesto (a vegan pesto like Radici of Tuscany Vegan Basil Pesto works really well in this recipe)

½ teaspoon of apple concentrate, sugar or honey

Salt and pepper

How To Make It

1. Sauté the onion in oil on a low heat until golden.  Add the garlic and cook for one minute.

2. Add the zucchini (courgette) and cook for about 5 minutes until it softens and becomes a little darker in colour.

3. Stir in the pesto, chopped tomato, tomato puree (tomato paste) and whatever sweetener you are using. Bring to the boil and simmer for 10 minutes. Season to taste.
