Spicy Cauliflower Soup Recipe

I've been making this for years and it's just the best soup ever. It always gets great reviews! My husband would have it everyday if he could!! Sometimes I add some fresh chili which gives it a nice kick. Serve it with warm naan bread.
1 tablespoon of olive oil
1 onion, chopped
1 crushed clove of garlic
1 tablespoon of crushed coriander seeds
1 teaspoon of cumin
half teaspoon of turmeric
600mls of vegetable stock
300mls of coconut milk
1 small cauliflower, cut into small florets
salt and pepper
2 tablespoons of fresh coriander/cilantro
1. Heat the oil in a pan and cook the onions and garlic until soft. Add the spices and stir for a minute.
2. Add the cauliflower, stock and coconut milk. Bring to the boil and simmer for 10 minutes or so. Add salt and pepper to taste.
3. Blend the soup, stir in the fresh coriander and serve.
