Favourite Raita Recipe
Here's a wonderful, simple and healthy raita recipe.

Of course, there are hundreds of
variations of this delectable yoghurt sauce but I think this
combination is particularly good.
Experiment with different herbs and spices with this if you like.
You
can also add some finely chopped or grated vegetables like cucumber,
carrot or pepper.
Even chillis.
Ingredients:
250mls/1 cup/9 fl oz of plain yoghurt (Greek is nice but any plain
yoghurt is fine)
Juice of half a lemon (about 2 tablespoons)
1 teaspoon of ground coriander
1 tablespoon of fresh chopped mint or 1 teaspoon dried mint
1 clove garlic, crushed
salt and pepper to taste
Method:
Just mix all the ingredients together, transfer to a small serving dish
and serve.
To Serve:
This
raita recipe
is really versatile. Traditionally raita is
an accompaniment to an Indian meal but it makes a delicious and healthy
dip too. I also think it’s a perfect accompaniment to
vegetarian burgers, particularly ones that use Indian spices like my
lentil burgers.
