One Of The Best Porridge Recipes. Cranberry And Brazil Nut Porridge

This is another of the porridge recipes that hails from our farmers' market days. The cranberries are a deliciously tart contrast to the oats while the brazils add lots of flavour and crunch.

The quantities in this porridge recipe are for a large batch to mix up and keep in the cupboard. It makes about 700g or just over 10 cups of the mix. If you just want to mix enough for now, I have also included quantities for a single batch.

Ingredients:

400g/14oz/8½ cups of rolled oats
240g/8½oz/1½ cups of dried cranberries
60g/2oz/1/3 cup brazil nuts, roughly chopped

Method - for the mix:

Simply mix all the ingredients together and store in an airtight container or sealed bag.


Method - for making your porridge:

To Serve 2 (or one hungry person!)
1. Put 50g (2oz or 3/4 of a cup) of your porridge mix into a saucepan with 250mls (9fl oz or 1 cup) of water or milk.
2. Stir over a medium heat for about 2 minutes until thick.  You can add a little more liquid if it seems too thick or stir in a little milk or cream at the table.


If you don't want to make a bag of porridge...


I find it handy to have a bag of my porridge mix made up but if you just want to make enough for now, use 6 tablespoons of rolled oats, 1½ tablespoons of dried cranberries and about half a tablespoon of chopped brazil nuts.  Follow the same method for making your porridge.  You can also use the same amount of liquid - 250mls (9fl oz or 1 cup).


Water or Milk?


In traditional porridge recipes, water only is used but a little milk really makes the porridge creamy.  You can use all milk if you like but personally I find this a bit too rich.  My preference is for a mixture of both.  About 1 part milk to about 4 parts water is good but you don't need to be too precise about this.
