This is one of the best muesli recipes you will ever taste. And it couldn't be easier.
A quick trip to a health food store and a bit of stirring is all you need for a seriously healthy, low fat, low cholesterol breakfast in your cupboard for weeks. Once that's done, it's just as easy as opening up a box of commercially bought muesli every morning.
I've included wheat flakes here because I really like the crunch they add to the muesli. If you can't get them or you want to make a wheat free muesli, replace them with more of the other cereals. An extra half cup each of rye, barley and oats is fine.
3/4 Cup Rye Flakes
3/4 Cup Barley Flakes
1 Cup Rolled Oats
1 1/2 Cups Toasted Wheat Flakes (if available)
3/4 Cup Brazil Nuts
3/4 C. (cup) Hazelnuts
3/4 C. Sunflower Seeds
3/4 C. Pumpkin Seeds
1 C. Dates, chopped
1 C. Sultanas
1/2 C.Dried Cranberries
3/4 C. Dried Apricots, chopped
Just mix everything together and store your muesli in an airtight container. Serve with milk or plain yoghurt and honey.
One of the things I love about this is that there is no added sugar or salt - unlike a lot of store bought muesli. It's also low fat, low cholesterol and very satisfying. With this muesli, you won't feel hungry before lunch.
