A microwave baked potato makes a fast and healthy snack. After all cooking baked potatoes in the microwave takes about the same amount of time as zapping a ready meal but it's a whole lot healthier. Here's how to do it.
First, wash and dry your potato as usual. Prick the skin several times with a fork or sharp knife.
Now of course the cooking time will vary slightly according to the size of the potatoes but these times work pretty well for an average baking potato.
Place the potato on a microwaveable plate and cook on full power for 2 minutes. Leave to stand for 1 to 2 minutes. Now turn the potato over and microwave again on full power for another 2 minutes. Leave to stand for 5 minutes before serving.
Check that the potato is cooked by piercing with a sharp knife or squeezing gently. It should feel soft.Microwaving again before you leave the potato to stand can leave you with an overcooked potato which you definitely don't want. An over-microwaved potato develops extremely waxy, dry flesh and wrinkled skin - pretty inedible in fact! If after 5 minutes, it does feel a little underdone, you can microwave again for a minute or so.
