Low fat pizza crust was something I used to be a bit skeptical about.
I've always liked to make my dough with plenty of olive oil. I guess I assumed it was a crucial part of what made a great pizza dough. But then I got to experimenting and was amazed at just how good homemade pizza dough can be without all that fat.
These days, I'm convinced that the essential factor for the best pizza crust is baking the pie using a pizza stone. For me, olive oil is optional. A pizza stone isn't.
Try this low fat pizza crust and see if you miss the olive oil. I honestly don't.
1 cup (150g) of flour. Use plain, bread flour, all-purpose or "00".
½ cup (125mls) of warm water
1/3 of a teaspoon of instant dried yeast
1 teaspoon of olive oil (optional)
Pinch of salt
I always use a food processor for my pizza dough. It's an incredibly quick and easy method that gives excellent results but you can make the dough by hand if you prefer.
First put the water, yeast and oil in the food processor and mix for a few seconds until combined. If you are working by hand, mix together in a large bowl, stirring very thoroughly with a wooden spoon.
Add the flour and salt and process again until the mixture comes together in a ball - about 30 seconds. Remove the dough from the food processor and shape into a small disc. By hand, you will need to keep mixing until you see the dough come together. At that stage, transfer to a floured work surface and knead for 5 to 10 minutes until smooth and elastic. Now shape into a disc.
Sprinkle the dough ball with flour and wrap in cling film or place in a polythene bag and leave for about an hour to rise.
If you are using a pizza stone, turn your oven on at least 30 minutes before cooking your pizza. This will ensure that the stone is really hot and your crust is perfectly crisp and light.
Set your oven as hot as it will go to. That is usually 450 to 500F degrees (250C).

Shape the dough into a round pie shape about 12 to 14 inches in diameter. Place on a well floured pizza peel and finish with your favourite toppings.
Finally slide the pizza from the peel onto the pizza stone and cook for 6-8 minutes.
