Carrot Recipe For A
Tasty And Simple Side Dish: Carrot And
Leek Mash
I love this carrot
recipe. It's so simple
but delicious and really livens up a vegetable that can - let's face it
- get a bit boring at times.
Ingredients:
1.5lb/600kg medium carrots
knob of butter
1 tbsp olive oil
200g/7oz leeks, washed and sliced
1 teaspoon of dried dill or thyme
Method:
1. Top and tail and peel the carrot and boil or steam until soft.
2. Mash the carrot with a knob of butter and some salt and pepper.
3.
Heat the olive oil in a pan and gently fry the leek for about 5 minutes
until soft. Stir in the dill or thyme and fry for another
couple
of minutes. Stir into the carrot mash and serve.
