Sweet Chilli Baked Tofu

Baking tofu is a simple technique which I like a lot. It radically improves the texture of tofu and allows it to fully absorb up any sauces or spices that you add.

I like to make the tofu pieces in advance and add them to sandwiches, stir fries or salads to transform your dish into something really special.

Ingredients:

I've given quantities here but really the method is what is important. Use as much tofu and sweet chilli sauce as you like, depending on what you are using it for. These quantities will serve about 4 people when added to a stir fry.

  • 1 tablespoon of sunflower, canola or other flavourless oil
  • 1 packet of firm tofu, about 300g or 10½ oz.  For this baked tofu recipe, I like to use pressed tofu and you will find that the results are a lot better. See the how to cook tofu page for instructions on how to do this.
  • About 250mls/1 cup of sweet chilli sauce. Use ready made or homemade. You'll need a double quantity of my homemade sweet chilli sauce recipe.

Method:

Preheat the oven to 200C/400F/Gas 6.

Use the oil to grease a baking sheet. This is necessary for this recipe because the sweet chilli sauce is sticky and your tofu is liable to stick if you don't use a thin layer of oil.

Cut the tofu into chunks about 2cm/1 inch in size.

Pour the sweet chilli sauce into a large bowl.

Toss the tofu pieces in the sweet chilli sauce, stirring carefully with a metal spoon to coat. Do this as gently as you can as tofu breaks easily.

Now transfer the tofu pieces to the baking sheet and arrange in a single layer.

Bake for 20 to 30 minutes until golden. Keep an eye on the tofu while it's cooking because the sweet chilli sauce can burn quite easily.

When the tofu is cooked, remove from the pan and allow to cool. With the sweet sauce, it's best not to leave it cool on the baking sheet or you may find it sticks.
