This apple cider vinegar salad dressing is fruity and tangy. It is also healthy and a little unusual.
Unusual I suppose because not only does it feature apple cider vinegar, it also uses orange juice and apple concentrate for sweetness. If you are not familiar with it, the apple concentrate I'm talking about is a pure concentrate that has been made with whole apples with nothing added to it. (This one is a good example.)
Apple concentrate is an excellent, healthier sweetener for cooking, particularly good added to dressings, sauces and stews. Of course, you can also use it to make an apple drink or just stir it into tea. You'll find it in health food shops but for this dressing, you can substitute honey if you prefer. The quantities here make about 600mls or a pint of dressing. The dressing will keep well in the fridge for about a month.
Put all of the ingredients into a blender or food processor and whizz
until smooth. Alternatively put everything into a screw top jar and shake vigorously until mixed.
This is an excellent all purpose
dressing and works particularly well on a green salad.
