Creamy Almond Milk Recipe

Here's an easy almond milk recipe for a creamy and healthy alternative to your usual dairy products.

It's vegan, cholesterol-free, lactose-free and very easy to make. It's great as part of a vegan breakfast, providing a satisfying and nutritious start to the day.

It is also an excellent substitute for milk when cooking and making your own is a very good option. It's healthy, fresh, free from additives and tastes so much better than any almond milk you can buy. You only need two ingredients - almonds and water.

For the best flavour, use whole unblanched almonds. That means plain brown almonds like the ones pictured here which haven't been roasted or salted. Skin them and grind them fresh. It's easy and the difference is remarkable.

Unblanched Almonds

Ingredients:

¾ cup/150g/6oz of whole unblanched almonds in their skins
2 cups/450mls/¾ pints of cold water

Almond Milk Recipe Method:

1. Put the almonds in a pot, cover them with water and bring to the boil.

2. After boiling vigorously for about a minute, turn off the heat and run the almonds under cold water to cool.

3. The skins become very loose and easy to remove after boiling so you can just pop the almonds out of their skins using a sharp knife or your fingers.

4. Grind the almonds in a blender or food processor. Gradually add cold water to make a smooth liquid. If you want a really smooth texture, you can strain the almond milk but it really isn't necessary.
