Asparagus, Chocolate, Easy Vegan Recipes And A Yummy Curry For Dinner

Welcome to Meatless Magic! It's been a busy month at Everyday Vegetarian Recipes as we celebrate the real arrival of Spring. Here are some of the highlights from the last month.

Amazing Asparagus

In praise of asparagus! A member of the lily family, asparagus is a wonderfully healthy food, packed with vitamin A, C, folic acid, potassium and fiber. It's low in calories, fat and sodium and is also believed to help detox the body. If all of that wasn't enough, it has long been lauded as an aphrodisiac and I'm sure you'll agree, it really is a joy to eat.

So how cool that asparagus season is almost here (depending on where you live of course). This beautiful vegetable is one of the culinary joys of late spring and early summer.

To celebrate, I've been sharing some asparagus recipes and tips on how to cook asparagus. Whether you would like to boil it, steam it or bake it, there's loads of info. Why not try an asparagus quiche or this yummy chilled asparagus soup.

Easter is approaching and most of us like to mark the occasion with chocolate eggs or an egg hunt. Not so long ago, this was not great news for anyone avoiding milk in their diet. Vegan Recipes

This month I finally got around to sorting out all of my vegan recipes. I apologize that it has taken so long but you can now view all of them at my easy vegan recipes page. There are loads there, including soups, salads, snacks, breakfast, main dishes and more. I really hope you enjoy them.

Staying with the vegan theme, this month's featured recipe is a yummy and easy vegan chickpea curry with spinach, coconut, potatoes, tomatoes and mango.
